Anne-Geneviève Poitras fell in love with fine foods during her university studies. She decided to trade in her books for pots and pans, and enrolled in Pastry and Bakery at the Institut du Tourisme et d'Hôtellerie du Québec in Montréal. It's only then that she discovered her real passion for fine chocolate and felt the need to share it... as this type of secret should not be kept!
Now established in Vancouver, Anne-Geneviève founded Chocolaterie de la Nouvelle France, a chocolate and confection shop inspired by French classics and the industry's latest trends.
The product itself is part of what inspires us; the smell, its beautiful colors and shine, the endless combinations and possibilities it offers.
But our biggest stimulation is the people's reactions when they taste fine chocolate; the way their eyes glow and how happy this discovery made them.
