The most renowned chocolatiers in the world use French chocolate for its perfect finesse, superior taste and texture. French chocolate it also appreciated for its lower content of sugar (vanilla) and fat when compared to Belgium, Swiss or American chocolate.
Most of the chocolate producers (Belgium, Switzerland, US, etc) use a mix of cocoa beans from different countries to produce various quality of chocolate, which are then used by chocolatiers or candy bars manufacturers.
Other producers such as Cacao Barry and Valrhona (France) use single origin or plantation cocoa beans to produce exquisite fine chocolate.
Single Origin chocolate is made from cocoa beans cultivated in limited quantities and harvested from a unique country, for example from Mexico or Venezuela.
Plantation chocolate is made from cocoa beans harvested from a unique plantation with its own flavours and personality. For example: the Alto el Sol plantation in Peru is surrounded by banana plantations, giving the beans a sweet fruity note.
